It can test the water loss rate of meat, and then get the water power, judge the water retention of meat and affect the storage of meat, and provide favorable data for the sensory quality research of meat products. The moisture content of meat samples measured by drying method is calculated by water content, and the moisture loss can be calculated automatically by texture analyzer TA1。
The Benefits of Texture Analysis Texture analysis can highlight quality improvement opportunities throughout the supply chain and the production process. New or alternative ingredients can be compared with existing ingredients. In production, texture analysis is used for the measurement and control of process variations such as temperature, humidity and cooking time. A texture profile analysis test replicates the effect of two bites on a sample. Lloyd Instruments NEXYGENPlus texture analysis software captures force, distance and time during the test, allowing the calculation of texture critical parameters such as: Adhesion Force Firmness Modulus Adhesiveness Fracturability Resilience Chewiness Gumminess Springiness Cohesiveness Hardness Stringiness.

● take 250g of meat sample (the longest muscle in the back, 2-3H after slaughter), use a circular sampler with a diameter of 2.532cm (area of about 5cm2), cut a sample of eye muscle in the center, with a thickness of 1cm, called mass, and the data will be uploaded to TA1 system automatically;
 
● it is placed on the pressure gauge platform with qualitative medium speed filter paper with good multi-layer water absorption. The water content is impervious and all the water is absorbed. The quality difference before and after pressure is the weight loss of meat sample;
 
● cover the meat sample with multi-layer qualitative medium speed filter paper, add a plastic plate, use a flat head cylindrical accessory with a diameter of 10cm, pressurize to 35kg, andkeep for 5min;
 
● after removing the pressure, immediately weigh the meat sample quality, and automatically upload the data to TA1 system;
 
Note: if the balance has no communication interface, it can be manually input into TA1 system and recorded automatically.
